Puppy Chow THM-XO

My apologies for the quality of this photo, I snapped this in a hurry after coming up with this recipe on a whim! : )

Break into 1/2-1 in. pieces, into a large bowl:

1- 8.5 oz. pkg. brown rice cakes, (salted or unsalted) (I use these, from my local health food store)

Set aside.

Melt together over low heat:

1 1/4 c. sugar free chocolate chips

1 c. creamy peanut butter

1/2 c. butter

Stir in:

1 1/2 t. vanilla

1/4 t. salt (decrease to 1/8 t. if using salted rice cakes)

Pour over:

Broken up rice cakes

Stir until evenly coated.

Toss with desired amount of sugar free powdered sugar substitute (I used 1 bag swerve powdered sugar) until coated.

Spread out on newspaper and let sit until dry. Place in a container or ziplock bag and try not to eat it all in one sitting.

My sister may kill me for posting this photo, but I love it!

This is her favorite dessert! 🙂
